They were once leaves……
Did you know the platters we serve your food on were once leaves? That’s right, these plates are crafted from naturally fallen leaves of the Areca palm tree. Collected and cleaned with care, they are transformed into durable platters using a heat-pressing process. By partnering with local farmers and manufacturers, our supplier Agrileaf creates a sustainable alternative to single-use plastics.

Ingredient Spotlight: Fable
Ever wondered what Fable is? Fable is a plant-based meat alternative crafted from shiitake mushrooms. These mushrooms have naturally dense, meaty fibres and a rich umami flavour, making them an excellent substitute for traditional meat. Packed with antioxidants, Fable is as nutritious as it is delicious.
Our clients have been thrilled with the dishes we've created using Fable, such as the Spicy Fable Shiitake Curry with Rice and Fable Shiitake Mushroom Penne Bolognese.

Q&A with Paulo 👨🏻🍳
1. Can you tell us a bit about yourself? How long have you been with Eden? I’ve been with Eden for 11 years and have worked in the catering industry for a total of 26 years - a career I’ve truly enjoyed. Outside of work, my time is devoted to my three children, who keep me busy and bring plenty of fun to my life.
2. What’s your role at Eden, and what does it involve? As the head chef, my primary role is preparing and cooking both hot and cold meals. In addition to this, I oversee the entire section, ensuring that every order is accurate. This involves double-checking orders and assisting the team wherever needed to guarantee that everything is prepared and dispatched correctly.
3. What’s the most memorable job you’ve worked on for Eden? During the pandemic a few years ago, we received a large order from Crisis, a homeless charity. The task was immense: preparing over 1,000 meals three times a day for three consecutive weeks around Christmas. It was all hands-on deck, with everyone pitching in, including Jeremy, our Director of Operations. Despite the challenge, we successfully delivered every single day, a tremendous achievement for our team.
4. What do you enjoy most about working at Eden? I genuinely enjoy everything about my work because I love what I do day to day, and I’m surrounded by great people. The most rewarding moments are when things get busy – I thrive on the energy and staying active.
5. Do you have a favourite menu item, past or present? It's tough to pick just one, as I enjoy so much of what we create. The Caribbean Lamb was excellent, as was the Vietnamese Chicken. However, I was most surprised by how much I enjoyed the "simplicity" chorizo and courgette pasta - despite not typically leaning toward vegan dishes. That, along with our spicy Fable curry, has been the most pleasantly surprising for me.
